Consider a career in Culinary Arts!
Culinary Arts is one of the fastest growing career opportunities both in the metropolitan New Orleans area and nationally. According to the Louisiana Department of Labor, employment in "Eating & Drinking Places" increased by almost 3,000 jobs between March, 1996 and March, 1997. Nationally, almost 250,000 cooks will be needed each year.
 
Superior Training
Three different programs are offered, all offering superior training for a career in culinary arts. The centerpiece is the Chef Apprenticeship Program, a European-style training program which integrates classroom-based training with considerable "hands-on" training as an apprentice employee in some of New Orleans' finest restaurants.

Specific skills and competencies each student must demonstrate before graduating from the apprenticeship program include:

  • purchasing, requisitioning and storage techniques
  • cooking and seasoning methods
  • recipe and menu development
  • meat, poultry, and seafood fabrication and cookery
  • food preparation according to standardized recipes from many regions of the world
  • garde manger techniques, including ice and tallow sculptures
  • baking and pastry creation and decoration skills
  • supervision and management organization theory
  • dining room service techniques, including tableside flambe cookery
  • principles of nutrition
